This recipe is Vendaikai Mocchai manga mandi, which has a unique taste – Tangy tamarind Gravy. This is a very famous Chettinad dish, which sure find it’s place in their menu for all occasions. Mandi means the water we collect while washing the rice, specially first time washed water called “Arisi mandi”. This water must be used while making the gravy. We have used okra, butter beans and raw mango in the gravy , you can also use any other vegetable and dried vegetable (Vathal). Ingredients For Vendaikai Mocchai Manga Mandi

Ladies Finger (Bindi / Vendaikai / Okra ) – 500 gm
Mocchai ( butter bean ) – 150 gm
Raw Mango – 75 gm
Gingelly oil – 50 ml
Mustard- 1 Tsp
Urad Dhal – 1 Tsp
Methi Seed – 1/2 Tsp
Cumin seeds – 1/2 Tsp
Curry leaves – 2 Sprigs
Shallots – 1 cup
Garlic – 8 to 10 No’s
Turmeric – 1 Tsp
Tamarind – lemon Size
Salt – To Taste
Tomatoes – 2 No’s
Arisi Kazhani ( Starch water ) – 2 cups
Coriander leaves – 1 sprig
