The well renowned French fries is served across the globe with almost all the staples such as roasted meat, burgers, fried or grilled fish . Also served by itself as a snack with Tomato sauce, chilli sauce, sweet chilli sauce, sour cream . Every one enjoys this crispy outside and soft inside fries. When we are making the French fries, select the mealy potato to get the right taste and texture. We need to follow the whole method right from cutting till serving. Few points to keep in mind. First, cut the potato in an even size. Second, blanch, cool and freeze the potatoes for at least an hour to get the right shape and texture. Thirdly, the oil must be in medium heat while half cooking the potatoes to get the soft texture inside, and to thoroughly cook the potatoes. Fourthly, The final frying should be done in the hot oil to get the crispy golden texture . Then season them immediately after frying.
