Vegetable guruma / kaikari kurma / subzi korma is an very popular South Indian style coconut based delicasy. It is a typical hotel style / Saravana Bhavan / kaiyendi / Udupi style godness vegetable dish, which is creamy, aromatic, spicy, tasty and Excellent accompaniment as a side dish for Kerala parota, puri, chappati, Ghee rice, iddiappam, set dosa & appam. This receipe is cooked with lots of fresh vegetables which have healthy intake of vitamins & minerals.

Ingredients for Veg Kurma

Masala:
Coconut-1/2 No
Cashew nuts – 1/2 tbsp
Poppy seeds – 1/2 tsp
Gr. Chilly – 6 No’s
Garlic – 7-8 No’s
Ginger – 1 inch piece
Fennel seeds – 1 Tsp
Cloves- 4
Cardamom -2
Cinnamon – 1
All the above ingredients grind in to smooth paste.

Vegetables:
All vegetable are cut into small cubes & also cut same sizes.
Potatoes- 1 cup
Carrot- 1cup
Beans -1 cup
Cauliflower/ 1 cup
Fresh green peas – 1cup

Gravy:
Ghee – 20 ml
Oil – 30 ml
Fennel seeds- 1 tsp
Cardamom-3 No’s
Cloves -5 No’s
Cinnamon -2 sticks
Star aniseed- 1 No
Stone flower – 2 No’s
Slit green chillies- 3 No’s
Curry leaves-2 sprigs
Onion- 1 1/2 No’s
Tomatoes-2 No’s
Turmeric Powder-1 1/2 tsp
Chilli powder-2 Tsp
Salt – To Taste
Sugar-1 Tsp
Mint leaves- 1 sprig
Coriander leaves-2 sprigs
