This video is about very famous traditional Andhra style tender eggplant stuffed dry preparation called Gutti Vankaya . Selecting tender eggplant with green stem is perfect for this recipe.Stuffed masalas prepared with peanut ,sesame seeds and dry copra and other household spices are roasted and ground mixed with tamarind water . These stuffed mixers stuffed inside half cooked eggplant and then roasted gently with these masalas in a very low flame for 10 mins .

Copra –
Peanuts | Ground nuts – 3 Tbsp
White sesame seeds – 1 Tbsp
Channa dal – 1 Tbsp
Garlic – 3 pods
Urad Dal – 1/2 Tbsp
Coriander seeds – 2 Tbsp
Cumin seeds – 1/2 Tsp
Pepper – 10
Fenugreek – 1/4 Tsp
Dry Chillies – 7 no’s
Curry leaves – 1 spring
Salt – To Taste
